Thermocouples are classified by calibration type because they have differing EMF (electromotive force) versus temperature curves. Some generate considerably more voltage at lower temperatures, while others do not begin to develop a significant voltage until subjected to high temperatures.
Also, calibration types are designed to deliver as close to a straight line voltage curve inside their temperature application range as possible. This makes it easier for an instrument or temperature controller to correctly correlate the received voltage to a particular temperature. Additionally, thermocouple calibration types have different levels of compatibility with different atmospheres. Chemical reaction between certain thermocouple alloys and the application atmosphere could cause metallurgy degradation, making another calibration type more suitable for sensor life and accuracy requirements.
Thermocouples are best suited to high temperatures, environmental extremes or applications requiring microscopic size sensors. They are also recommended for high vibration environments.

Roller Wheel Moving Surface Thermocouple
Type K ( Chromel / Alumel ), Temp range -250 to 260°C , Probe length 2.4", Cable length 3 ft,
Connections mini-connector, Junction exposed These probes are designed for monitoring a wide range of flat surfaces. Choose from a variety of
surface probes—standard, angled for hard-to-reach areas, heavy-duty, or special-purpose surface probes
for specific applications. These probes include a handle; strain relief spring on handle protects the cable
connection against damage due to repeated flexing and tugging. Probes include handle with strain relief
spring and feature color-coded ANSI mini-connectors: type K—yellow
